Pekli jsme tento cheesecake na cheesecakov\u00fd kurz pe\u010den\u00ed a nebyl nikdo, kdo by si jej nezamiloval. Cheesecake se toti\u017e pe\u010de ve vodn\u00ed l\u00e1zni.<\/p>\n<p><b>P\u0159\u00edprava trouby.<\/b> Ro\u0161t v troub\u011b polo\u017e\u00edme do st\u0159edu trouby a troubu p\u0159edeh\u0159ejeme na 175 \u00b0C horkovzduch.<\/p>\n<p><b>P\u0159\u00edprava korpusu. <\/b>M\u00e1slov\u00e9 su\u0161enky zna\u010dky Biopek\u00e1rna Zemanka<span><sup> <\/sup><\/span>vlo\u017e\u00edme do food procesoru (p\u0159\u00edpadn\u011b sekac\u00edho n\u00e1stavce ty\u010dov\u00e9ho mix\u00e9ru) a rozmixujeme najemno. M\u00e1slo rozpust\u00edme v mal\u00e9 misce v mikrovlnce anebo v mal\u00e9m hrnci na indukci a p\u0159ilejeme jej spole\u010dn\u011b se \u0161petkou soli k rozmixovan\u00fdm su\u0161enk\u00e1m. N\u011bkolika pulzy promixujeme, dokud m\u00e1slo neobal\u00ed v\u0161echny su\u0161enky. Food procesor neum\u00fdv\u00e1me, budeme v n\u011bm toti\u017e m\u00edchat kr\u00e9m.<\/p>\n<p>Obsah se su\u0161enkami vysypeme na dno formy a malou misti\u010dkou anebo malou skleni\u010dkou s rovn\u00fdm dnem su\u0161enky ve form\u011b utla\u010d\u00edme. Aby spodn\u00ed vrstva su\u0161enek byla p\u0159\u00edjemn\u011b pevn\u00e1 a ne tolik vlhk\u00e1, vlo\u017e\u00edme ji nyn\u00ed do trouby a pe\u010deme 10 minut, dokud nejsou su\u0161enky zlatav\u00e9. Rad\u011bji se do trouby tu a tam mrkn\u011bte, proto\u017ee ka\u017ed\u00e1 trouba pe\u010de jinak.<\/p>\n<p><b>P\u0159\u00edprava kr\u00e9mu. <\/b>Do food procesoru, ve kter\u00e9m jsme mixovali Zemanka su\u0161enky vlo\u017e\u00edme Lu\u010dinu Smetanovou a na st\u0159edn\u00ed rychlost ji 2 minuty pro\u0161leh\u00e1me. V polovin\u011b mixov\u00e1n\u00ed st\u011brkou set\u0159eme \u010derstv\u00fd s\u00fdr ze stran. P\u0159isypeme cukr krystal a mixujeme 1 minutu. Op\u011bt st\u011brkou set\u0159eme ve\u0161ker\u00fd kr\u00e9m na st\u011bn\u00e1ch m\u00edsy a nadzvedneme tak\u00e9 mixovac\u00ed no\u017ee, abychom se ujistili, \u017ee pod nimi nen\u00ed nevym\u00edchan\u00fd kr\u00e9m. Pot\u00e9 do kr\u00e9mu klepneme prvn\u00ed vejce a nech\u00e1me jej na n\u00edzkou rychlost promixovat. St\u011brkou set\u0159eme kr\u00e9m ze stran m\u00edsy a p\u0159id\u00e1me druh\u00e9 vejce. Op\u011bt promixujeme a p\u0159id\u00e1me mangov\u00e9 pyr\u00e9 (tzn. na\u0161e rozva\u0159en\u00e9 kousky manga) pokojov\u00e9 teploty spole\u010dn\u011b se zakysanou smetanou a smetanou ke \u0161leh\u00e1n\u00ed. Nyn\u00ed mixujeme na n\u00edzkou rychlost tak dlouho, abychom m\u011bli v kr\u00e9mu jen mal\u00e9 kous\u00ed\u010dky manga. Na ro\u0161t v troub\u011b polo\u017e\u00edme hlubokou velkou p\u00e1nev, kter\u00e1 m\u016f\u017ee do trouby a z\u00e1rove\u0148 se do n\u00ed vleze forma s cheesecakem. Troubu p\u0159edeh\u0159ejeme na 160 \u00b0C horn\u00ed a doln\u00ed oh\u0159ev (\u017e\u00e1dn\u00fd horkovzduch, kter\u00fd by rozv\u00e1d\u011bl teplo p\u0159\u00edli\u0161 rychle, a tak by se mohl kr\u00e9m srazit).<\/p>\n<p><b><\/b>Do mal\u00e9ho hrnce nalijeme vodu a d\u00e1me ji na indukci zava\u0159it.<\/p>\n<p><b>P\u0159\u00edprava cheesecaku.<\/b>\u00a0S m\u00edsou od food procesoru, ve kter\u00e9 je kr\u00e9m, p\u00e1rkr\u00e1t klepneme o pracovn\u00ed desku. D\u011bl\u00e1me to proto, abychom odstranili p\u0159\u00edpadn\u00e9 na\u0161lehan\u00e9 bublinky. Na su\u0161enkov\u00fd korpus nalijeme vymixovan\u00fd kr\u00e9m. Schv\u00e1ln\u011b jsme jej nemixovali na vysokou rychlost, ale sp\u00ed\u0161e n\u00edzkou, maxim\u00e1ln\u011b st\u0159edn\u00ed, proto\u017ee moc vy\u0161lehan\u00fd kr\u00e9m by m\u011bl v sob\u011b bublinky, kter\u00e9 by se zv\u011bt\u0161ovaly, a p\u0159i pe\u010den\u00ed by povrch korpusu prasknul.<\/p>\n<p>Mal\u00fdm rozt\u00edrac\u00edm no\u017eem povrch kr\u00e9mu zahlad\u00edme. Pokud se n\u011bkde objev\u00ed bublinka, je t\u0159eba ji no\u017eem prasknout a zahladit op\u011bt povrch dohladka.<\/p>\n<p>Takto p\u0159ipraven\u00fd cheesecake polo\u017e\u00edme doprost\u0159ed p\u00e1nve v troub\u011b a ihned do p\u00e1nve p\u0159ilijeme va\u0159\u00edc\u00ed vodu zhruba do 1\/3 v\u00fd\u0161ky na\u0161eho cheesecaku. Troubu okam\u017eit\u011b zav\u0159eme, aby se moc nevyv\u011btrala.<\/p>\n<p><b>Pe\u010den\u00ed.<\/b> Pe\u010deme 35-40 min. Po t\u00e9to dob\u011b otev\u0159eme troubu a rychle zkus\u00edme formou zat\u0159\u00e1st. M\u011bl by m\u00edt zata\u017een\u00fd povrch, a kdy\u017e formou jemn\u011b zat\u0159eseme, okraje by zhruba v \u0161\u00ed\u0159ce 6 cm m\u011bly b\u00fdt pevn\u00e9. St\u0159ed by ale m\u011bl b\u00fdt jemn\u011b pohybliv\u00fd, takov\u00fd jakoby pudinkov\u00fd :-). Cheesecake toti\u017e v lednici je\u0161t\u011b ztuhne.<\/p>\n<p><b>Zhotoven\u00ed cheesecaku.<\/b> Upe\u010den\u00fd cheesecake nech\u00e1me ve vypnut\u00e9 troub\u011b s otev\u0159en\u00fdmi dv\u00ed\u0159ky 15-20 min odpo\u010d\u00edvat. Na vychlazen\u00fd cheesecake tuto \u017eelatinovou vrstvu nalijeme a nech\u00e1me cheesecake dal\u0161\u00ed 3 hodiny vychladit.<\/p>\n<p><b>Servis.<\/b> Vychlazen\u00fd cheesecake vyjmeme z lednice a \u0161pi\u010dkou ostr\u00e9ho a m\u011bkk\u00e9ho no\u017ee objedeme zevnit\u0159 formy cel\u00fd obvod dezertu.
