M\u016f\u017eeme jej sv\u00e1zat potravin\u00e1\u0159sk\u00fdm prov\u00e1zkem, aby p\u011bkn\u011b dr\u017eelo sv\u016fj tvar. Nyn\u00ed nech\u00e1me po\u0159\u00e1dn\u011b nah\u0159\u00e1t litinovou nebo silnost\u011bnnou p\u00e1nev. My m\u00e1me indukci, tak\u017ee je p\u00e1nev nah\u0159\u00e1t\u00e1 rychle. Bude to prskat a sy\u010det, ale to tak mus\u00ed b\u00fdt. Po minut\u011b se pod\u00edv\u00e1me, zdali m\u00e1 maso zespod zlatavou ope\u010denou k\u016frku. Pokud ano, obr\u00e1t\u00edme jej na druhou stranu na m\u00edsto v p\u00e1nvi, kde p\u0159edt\u00edm nele\u017eelo, nebo\u0165 to m\u00e1 vy\u0161\u0161\u00ed teplotu. Op\u00e9k\u00e1me maso tak\u00e9 z druh\u00e9 strany dozlatova. Takto p\u0159elijeme zhruba 5x, maso obr\u00e1t\u00edme na opa\u010dnou stranu a znovu p\u00e1rkr\u00e1t m\u00e1slem p\u0159elijeme. V t\u00e9to chv\u00edli maso vyjmeme z p\u00e1nve, polo\u017e\u00edme jej na tal\u00ed\u0159, \u00a0horizont\u00e1ln\u011b p\u00edchneme do jeho st\u0159edu sondu, a nastav\u00edme vnit\u0159n\u00ed teplotu na 51 \u00b0C (my chceme medium rare a po\u010d\u00edt\u00e1me s t\u00edm, \u017ee teplota masa po vyta\u017een\u00ed z trouby je\u0161t\u011b o 3 \u00b0C vzroste, a tak budeme na 54 \u00b0C). Na maso je\u0161t\u011b polo\u017e\u00edme rozbit\u00e9 strou\u017eky \u010desneku z p\u00e1nve, v\u011btvi\u010dku rozmar\u00fdnu a p\u0159id\u00e1me nav\u00edc m\u00e1slo (1 PL), kter\u00e9 se bude v troub\u011b rozpoz\u0161t\u011bt a vsakovat p\u0159\u00edmo do steaku (viz fotky n\u00ed\u017ee). Maso takto polo\u017e\u00edme p\u0159\u00edmo na ro\u0161t um\u00edst\u011bn\u00fd ve st\u0159edu trouby vyh\u0159\u00e1t\u00e9 na 120 \u00b0C.
