Pokud se bude zd\u00e1t t\u011bsto po d\u016fkladn\u00e9m zapracov\u00e1n\u00ed (klidn\u011b 8 min) m\u00e1lo kompaktn\u00ed, p\u0159id\u00e1me je\u0161t\u011b l\u017e\u00edci ml\u00e9ka. Pokud bude naopak moc \u0159\u00eddk\u00e9, p\u0159id\u00e1me tro\u0161ku mouky. T\u011bsto zabal\u00edme do voskovan\u00e9ho ubrousku (p\u0159\u00edpadn\u011b potravin\u00e1\u0159sk\u00e9 f\u00f3lie) a nech\u00e1me jej v lednici odpo\u010d\u00edvat zhruba 15 min, aby povolen\u00e9 m\u00e1slo mali\u010dko ztuhlo a l\u00e9pe se n\u00e1m t\u011bsto poda\u0159ilo vyv\u00e1let.<\/p>\n<p><b>2) Zhotoven\u00ed lime curd. <\/b>Do misti\u010dky nav\u00e1\u017e\u00edme cukr, do kter\u00e9ho nastrouh\u00e1me limetovou k\u016fru najemno. Pozor na to, abychom strouhali opravdu jen omytou k\u016fru bez b\u00edl\u00e9 \u010d\u00e1sti, kter\u00e1 je ho\u0159k\u00e1. K\u016fru v cukru prom\u00edch\u00e1me. Do mal\u00e9ho hrnce bez v\u00fdlevky nalijeme zhruba 2 cm vody a do hrnce polo\u017e\u00edme nerezovou nebo sklen\u011bnou m\u00edsu tak, aby se dno m\u00edsy nedot\u00fdkalo vody. Do dal\u0161\u00edho mal\u00e9ho hrnce nalijeme limetovou \u0161\u0165\u00e1vu, d\u00e1me kuku\u0159i\u010dn\u00fd \u0161krob, h\u0159eb\u00ed\u010dek a \u0161petku soli. V\u0161e pova\u0159\u00edme na m\u00edrn\u00e9m varu, dokud se \u0161krob nerozpust\u00ed. Nyn\u00ed vynd\u00e1me z limetov\u00e9 \u0161\u0165\u00e1vy h\u0159eb\u00ed\u010dek, kter\u00fd do n\u00ed ji\u017e pustil aroma. Do m\u00edsy vlo\u017e\u00edme \u017eloutek spole\u010dn\u011b s ovon\u011bn\u00fdm cukrem a ty\u010dov\u00fdm mix\u00e9rem s n\u00e1stavcem typu metli\u010dka sm\u011bs p\u0159i st\u0159edn\u00edm varu vody v hrnci \u0161leh\u00e1me, dokud nen\u00ed sm\u011bs homogenn\u00ed a nezesv\u011btl\u00e1. Takto se oh\u0159ej\u00ed \u017eloutky na takovou teplotu, aby byly pro lidsk\u00fd organismus zdravotn\u011b nez\u00e1vadn\u00e9. Jakmile je sm\u011bs spojen\u00e1 a zesv\u011btlala, za\u010dneme do n\u00ed po malinkat\u00e9m \u201e\u010d\u016frku\u201c za st\u00e1l\u00e9ho \u0161leh\u00e1n\u00ed na n\u00edzkou rychlost p\u0159il\u00e9vat oh\u0159\u00e1tou limetovou \u0161\u0165\u00e1vu z druh\u00e9ho hrnce. Mus\u00edme to d\u011blat pomalu, aby se \u017eloutek nesrazil. Nechceme m\u00edt toti\u017e m\u00edchan\u00e9 \u017eloutky, ale kr\u00e1sn\u011b kr\u00e9mov\u00fd kr\u00e9m.
